Bacon, Avocado & Egg with Pan-Roasted Potatoes

A simple, hearty, delicious breakfast.

  • 1 loaf sourdough bread
  • 1 egg per person
  • 1 avocado
  • 3 slices bacon per person
  • 3 tbsp olive oil
  • 1/2-1/4 lb red potatoes
  1. I'm a big fan of bakin' bacon. Set your oven to 400ºF.

  2. Arrange bacon in a single layer on a baking sheet.

  3. Bake for 15-20 mins until desired crispiness.

  1. Fry an egg, dude. You got this.

Pan-Roasted Potatoes
  1. Cut potatoes into quarters.

  2. Toss yer 'taters in 1 tbsp of olive oil and a pinch of salt.

  3. Add 2 tbsp olive oil to your skillet over medium heat. Once warm, add your potatoes.

  4. Cook potatoes on one side to desired brownness, 8-10 minutes.

  5. Turn potatoes to other side and cook another 5 minutes or so.

  6. Salt to taste and serve.

  1. Slice your sourdough bread into chunky slices.

  2. Toast your bread.

  3. Top with avocado, bacon and egg. Serve with potatoes.
