A simple, hearty, delicious breakfast.
I'm a big fan of bakin' bacon. Set your oven to 400ºF.
Arrange bacon in a single layer on a baking sheet.
Bake for 15-20 mins until desired crispiness.
Fry an egg, dude. You got this.
Cut potatoes into quarters.
Toss yer 'taters in 1 tbsp of olive oil and a pinch of salt.
Add 2 tbsp olive oil to your skillet over medium heat. Once warm, add your potatoes.
Cook potatoes on one side to desired brownness, 8-10 minutes.
Turn potatoes to other side and cook another 5 minutes or so.
Salt to taste and serve.
Slice your sourdough bread into chunky slices.
Toast your bread.
Top with avocado, bacon and egg. Serve with potatoes.
