Bacon Avocado and Egg on Toast

Breakfast at the Farmhaus

Leelanau County

It was the middle of February up in Leelanau County, and we were facing a week of hurricane-strength winds and several feet of snow. Knowing the roads would be terrible in the impending blizzard, we hit Hansen's to stock up on food and snacks, before hunkering down in the Modern Farmhaus to get our hygge on.

I’ve already shared the Soft Pretzel Bites and Peanut Butter Shortbread Cookies we made to keep us fat and happy during the storm. But let’s not get ahead of ourselves: a day of snacking requires a proper breakfast to set the stage. 😉

One of the breakfasts I planned was bacon, avocado and egg on toast with pan-fried potatoes. It’s a basic, hearty breakfast to start your day right. As you can see, there’s no real crazy magic. It’s just 5 ingredients, prepared simply, assembled into something delicious.

The raw ingredients couldn’t be more simple: bacon, eggs, some potatoes, an avocado, and a loaf of bread. I prefer sourdough, which I slice into sufficiently thick slices, because it’s dense enough to stand up to the other ingredients.

Avocad-pro-tip: If you’re unfamiliar with avocados, be careful not to cut your fingers off. It’s easy to do! Hold the avocado in a towel to protect your hand as you cut lengthwise down the avocado. There’s a hard pit in the middle that you cannot slice through, so rotate the avocado around the pit as you slice the other side. Then, simply twist both halves and pull apart. But don’t take my word for it — go watch a video tutorial.

When people down south hear of my Michigan roots, they always respond with “yeah, but… I could never stand the winters.” That’s understandable, and even the most hardened Michigander is ready to GTFO once the season gets gnarly. But give me some tasty food, the darkest beer you can find, and some relaxing music, and I’ll eagerly weather whatever winter storm you throw at me.
